After a brief recall and a short description of the LCA (Life Cycle Assessment) methodology, whose aim is to define and evaluate the environmental impacts related to a product service within its life cycle, the work is focused on the second step of LCA methodology: the Impact Assessment step. In particular you can find: -a review of the state of the art -a critical identification of environmental indicators, of normalisation and weightening principles for the different environmental categories specific for Italy. Then you will find the application of the methodology to a case study concerning the production of butter by the Consorzio Granterre of Modena. In conclusion, some considerations are done about the status and the limitations of the actual development, in particular referring to the Impact Assessment step. Finallv, neecls for research and development are underlined.
